How to Make Elderflower Cordial (and Why I Love It)

There is something magical about elderflower to me. Every summer I look forward to the delicate, warm scent of elder in bloom in the city, sweet, lightly herbal and almost floral like honey. It is as if nature whispers: it is summer. For me elderflower is pure nostalgia and inspiration. That is why every year I pick a small bunch to make my own elderflower cordial.

This homemade cordial is wonderful in sparkling water, cocktails, over pancakes or even in a fresh salad dressing. And the best part: it is incredibly simple to make and the perfect excuse to get outdoors.

What you need

  • 20 to 30 elderflower heads (freshly picked)
  • 1 litre water
  • 1 kilo caster sugar
  • 1 organic lemon
  • Optional: a few slices of fresh ginger or lemon balm for extra flavour

Tip: Pick elderflowers on a dry, sunny day. That is when they are most aromatic.

How to make elderflower cordial in 4 steps

Making elderflower cordial step by step

Step 1: Clean and prepare. Gently shake the flowers to remove any insects. It is better not to rinse them so you preserve the fragrant pollen. Slice the lemon.

Step 2: Infuse. Put the flowers and lemon in a large glass jar or pot. Bring the water to the boil, pour it over the flowers and leave to infuse covered for 24 hours in a cool place.

Step 3: Strain and cook. The next day, strain the mixture through a fine cloth or sieve. Add the sugar to the strained liquid and warm slowly until the sugar has fully dissolved. Then bring to a brief boil.

Step 4: Bottle. Pour the hot cordial into thoroughly cleaned bottles or jars. Seal immediately. Store in a cool, dark place and the cordial will keep for several months.
